Do-it-yourself sushi? That’s the idea behind Pink Nori, a sushi restaurant coming soon to 36-06 30th Avenue in Astoria. The brainchild of Stony Brook University student Jesse Tang, Pink Nori appears to be an entirely new concept to the New York restaurant scene, as We Heart Astoria reported. Tang, who recently won the $10,000 Long Island Youth Entrepreneur Challenge for his idea, plans to open the restaurant with his family later this summer. The restaurant gets its name from a type of sushi wrapper made from soybeans, not seaweed, that comes in pink, among other colors.
